A delicious and detoxifying coriander pesto!

Who loves the smell of fresh coriander? Delicious and fragrant as a garnish on many dishes, did you know that coriander is also a powerful healing herb? 

Coriander, also known as cilantro and Chinese parsley, is high in phytonutrients and  possesses anti-inflammatory and anti-bacterial properties. It is frequently used to treat inflammation in the gut, arthritis and food poisoning. We love it for its ability to help detoxify the body from heavy metals such as mercury, lead and cadmium! 

Mercury is a significant component in dental mercury amalgam fillings, commonly known as silver fillings. Scientific research has shown that mercury does leak from these fillings and can accumulate in the body over time. It has also been shown that the most amount of mercury is released when these fillings are placed and removed. Although the use of mercury amalgam is on the decline in dentistry and many countries around the world have banned these fillings there is still a danger of a significant amount of exposure to mercury when they are removed.

This coriander pesto makes a delicious dip for raw vegetables and is a lovely change from basil which is traditionally found in pesto. The cheese and nuts add good fats and protein.The garlic and lemon add flavour and further boost the immune system. 

Coriander Pesto:

Prep 10 min/ Serves: 1 cup

Ingredients:

·     Large bunch of coriander

·     ¼ cup toasted activated cashew nuts

·     3 tablespoons freshly grated parmesan cheese (omit if vegan)

·     2 tablespoons of organic extra virgin olive oil

·     Juice of one lemon

·     1 clove garlic crushed

Simply blend all the ingredients together and add salt and pepper to taste. Serve as a side dish to sliced raw veggies such as carrots and celery!
